A study published in August 2026 in the Journal of Nutrition Education and Behavior reveals a significant gap between culinary skill levels and actual kitchen independence for adults with visual impairment. The research, involving 121 adults at a Brazilian rehabilitation institute, found that practical barriers persist despite high self-reported abilities.

Researchers from the Federal University of the State of Rio de Janeiro used a tailored questionnaire and interviews. They assessed meal preparation abilities, confidence, and everyday obstacles. The team was led by Professor Simone Augusta Ribas, Ph.D.

The assessment classified participants' culinary skills. No one was rated as having low skills.

Despite these generally positive scores, the data did not reflect full functional autonomy. Many participants reported ongoing difficulties. These included accessing food in their own homes, following recipes, and using certain cooking techniques. Over 40% indicated challenges with specific tasks like measuring ingredients and sanitizing food properly.

Factors Influencing Kitchen Autonomy

The analysis also identified factors linked to higher skill levels. Black participants were more likely to demonstrate high culinary skills and greater autonomy using ovens, stoves, and frying techniques. In contrast, participants who primarily used braille for reading were less likely to achieve high culinary skill levels compared to those using audio-based methods.

Ribas explained the core finding. "Having culinary skills on paper does not necessarily translate to full independence in the kitchen," she said. The study points to the importance of tackling practical and environmental barriers faced daily.

Pathways to Greater Independence

The researchers stress that improving culinary autonomy requires more than skill development alone. They recommend specific adaptations. Accessible kitchen tools, alternative reading formats, and targeted training programs can help individuals prepare meals safely and confidently.

The study also calls for inclusive public health strategies. Culinary education programs, rehabilitation services, and nutrition policies should consider the unique needs of people with visual impairment. This approach aims to promote independence, improve diet quality, and reduce food insecurity risk.

Ribas notes the broader role of these skills. "Culinary skills play a critical role in supporting healthy eating behaviors and food security," she stated. The research highlights a need for more inclusive approaches in nutrition education and further study to support diverse populations.
